Recipes

Garlic Electuary

1 head of garlic

1 450-gram jar honey

Peel and crush the garlic, then add it to the jar of honey. Stir well and seal. This makes a good antibiotic cough “syrup,” or it can be applied directly to cuts and scrapes.

Garlic Oxymel for Colds and Flu

1–2 heads of garlic

4 centimetres fresh ginger

2 tablespoons fresh sage leaves or 1 tablespoon dried

250 millilitres (1 cup) honey

1 heaped teaspoon cumin seeds

250 millilitres (1 cup) cider vinegar

Peel the garlic and chop the individual cloves. If you have a large garlic bulb, one will do, or use two small ones. Peel and grate the ginger. Chop the sage leaves. Put the garlic, ginger, and sage into a jar. Pour on the honey. Lightly crush the cumin seeds in pestle and mortar and put these in a pan with the vinegar. Gently warm through without boiling for a few minutes. Pour this into the jar with the rest of the ingredients. Fit a non-metal lid (vinegar will corrode the metal and taint your oxymel) and keep in a cool, dark place for two to three weeks, shaking daily. Strain though muslin into a sterilised jar. Take one or two teaspoons, dissolved in warm water, as needed when you feel the onset of a cold, flu, or sore throat.
